Peanut Butter Chocolate Chip Cookies

We are back with yet another delicious dessert recipe for you.This one involves one of our (or Haley’s) favorite ingredient.. peanut butter! Lots and lots of peanut butter. These cookies are soft and gooey and they just melt in your mouth, plus they are made using healthy ingredients. We followed Making Thyme for Health‘s recipe for Chocolate Dipped Peanut Butter Cookies.

Ingredients:

  • 2 cups oat flour
  • 1.5 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup peanut butter – or any nut butter you prefer
  • 1/4 teaspoon vanilla extract
  • 1/3 cup honey
  • 1/3 cup unsweetened applesauce
  • 2 tablespoons melted coconut oil
  • 1/3 cup chocolate chips + a little extra for good measure 😉

1. Preheat oven to 350 degrees.

2. Measure out and mix all the dry ingredients in a bowl (flour, baking powder, baking soda, and salt).

3. Measure out and mix all the wet ingredients into a separate, slightly bigger bowl (peanut butter, vanilla extract, honey, applesauce, oil).

4. Pour the dry ingredients into the wet and mix together until a uniform dough is formed.

5. Add the chocolate chips to the mixture.

 

 

 

IMG_17706. Roll dough into tablespoon sized balls and place on a parchment paper on top of a baking sheet.

 

 

IMG_17907. Bake for 10 minutes, or until the bottom of the cookie is golden brown. The cookies will feel fluffy to the touch.

8. Let cool and enjoy with your favorite nighttime beverage!

Get to know us – 25 question tag

Hello again! We thought it would be fun to each take a get to know me quiz so people can start to see who we are a bit more. We took this quiz last night while watching Mad Men – a new obsession. Rose was eating her popcorn and Haley had some ice cream. It was quite fun and simple, you should try it out! Without further ado here are our answers to the get to know me tag.

1. Do you have a middle name?

HD: Yes – McIntire

RH: Yes, but I’m not telling!

2. What was your favorite subject in school?

HD: Science until I had to take physics, then I would say art.

RH: Well I was a psychology/neuroscience major in college so that, but in high school and before I liked math.

3. What’s your favorite drink?

HD: Tea in the morning and wine at night.

RH: Tea… maybe lame but I love it (and wine – esp. rose for summer!) but for non alcoholic = tea.

4. What’s your favorite song at the moment?

HD: I think this might be old but I recently discovered it, The Line by Phish or Budapest by George Ezra.

RH: Well it definitely changes often! I like to be able to sing to it and I like it catchy! But I’d probably say either All the way by Timeflies or Hold on I’m coming home or stay alive or thunder clatter. Ask me again in 2 weeks and I’ll have a new one!

5. What would you name your children?

HD: I’ve always liked the name Lily for a girl and more recently Arden. Boy names are a bit harder though. I’m not sure I will really know until I am actually pregnant though.

RH: I don’t know I’m not really sure. I really like guys names for girls though so maybe something like that? I’d want an R name. Comment any ideas!

6. Do you participate in any sports?

HD: In high school I played field hockey and tennis. But today I do not play any sports, but I do exercise. I like to run, lift, do yoga, HIIT workouts.. you name it.

RH: Well I played soccer growing up. Then I played volleyball in high school. But since a portion of this blog is about fitness you might have gathered that I like to workout and feel active and healthy in general so not really a sport, but fun exercise!

7. What’s your favorite book?

HD: I love to read and have a lot of books I really enjoyed. But for a favorite book I would have to say the Harry Potter series, and if we are getting specific, the 4th.

RH: I like a lot of books, definitely depends on my mood and the time of year.

8. What’s your favorite color?

HD: I’ve always liked blues. Recently I’ve been into mint and gold.

RH: Well I really just like colors! But I have to say pink. Bright magenta-y-pink.
9. What’s your favorite animal?

HD: Giraffes!

RH: That’s hard… zebras, ducks, donkeys, puppies, I like animals! Hippos, giraffes, penguins!

10. What’s your favorite perfume?

HD: Uh does bath and body sprays count? I love those. As for an actual perfume I have been into Daisy recently.

RH: I couldn’t tell you… I like a variety of smells depending on my mood – more sweet vs. more floral.

11. What’s favorite holiday?

HD: Halloween! I love the fall and dressing up. Plus carving pumpkins!

RH: These questions are hard! I really like Christmas. Family, snow outside, cozied up inside, hot chocolate, presents, I love it!

12. Have you graduated from high school?

HD: Yep in 2010.

RH: Yes!

13. Have you been out of the country?

HD: Yes, a few times. I can’t wait to travel more!

RH: Yep, lots of times. I want to travel more though.

14. Do you speak any other languages?

HD: I took French through middle school and high school and could order pizza pretty well when we were in Paris, but I would say I am no means fluent. Plus I have really forgotten a lot since high school, which is sad.

RH: No, I wish I did. I should have stuck with Spanish after high school. I think I could have done well with it.

15. Do you have any siblings?

HD: Yep, 2 older brothers.

RH: Nope.

16. What’s your favorite store?

HD: Target!!! They have everything plus it all is (relatively) cheap.

RH: Just one store?! Target, Anthropologie (as if I can afford it) – the grocery store – anyone, Shaws, Whole Foods, Price Chopper, Trader Joes, Wegmans, any! I like clothes and I like shoes and I like food!

17. What’s your favorite restaurant?

HD: Probably a hometown restaurant called Molly’s. They have the best bread and butter, plus they have $2 margaritas.

RH: I don’t have one… I like to cook! But probably a good Indian place – authentic and yummy!

18. Do you like school?

HD: Sometimes, but I don’t learn very well in that environment so I find it frustrating.

RH: I do like school, when there aren’t tests…

19. Who are some of your favorite YouTubers?

HD: Probably FitnessBlender.

RH: Uhh fitness blender? I don’t really follow any.

20. What’s your favorite movie?

HD: Hmm.. I tend to watch movies once and then sort of forget about them, besides Harry Potter. I love A Little Princess from my childhood though.

RH: I’m not good at remembering movies… Let’s see… Maybe Despicable Me or Up… I like good movies I just can’t think of a recent one all of a sudden! Actually we just watched the Amazing Spiderman and I loved it! haha.

21. What are some of your favorite TV shows?

HD: Chopped, Guys Grocery Games, Grey’s, Parks and Rec, Miranda, Friends, How I Met Your Mother! The list goes on…

RH: How I met your mother, parks and rec, shark tank, chopped, cut throat kitchen, anything on food network or HGTV. Miranda! Grey’s anatomy. Currently watching mad men!

22. PC or Mac?

HD&RH: Mac.

23. What phone do you have?

HD&RH: Iphone

24. How tall are you?

HD: 5’2

RH: Not tall. 5’1

25. Any pets?

HD: No 🙁 Hopefully a dog once I’m settled and living some place that allows large dogs – I grew up with great danes.

RH: I want a dog! But sadly no.

Who we are

Hello blog world, we would like to take a moment to introduce ourselves.

We are Rose and Haley and this is our blog, Popcorn and Chocolate. We have wanted to start this blog for a long time coming and finally have decided to dive right in. What you will find on this blog will be a mixture of what we enjoy to do, whether that be cooking a healthy dinner or creating a fun craft. We want to share our ideas with the world and try to make something that will encourage us to be creative and seek out fun opportunities. This lifestyle blog will have posts on food, fitness, crafts, fashion, and any miscellaneous stuff we decide to throw in! You can expect a lot of pictures and step by step instructions on how we did things. We will try and post two days a week. We want to encourage you to join in on whatever creations we have made and to share them with us. Let’s do this together!
